Following on from last weeks batch cooking for Amelia in preparation for the arrival of our new baby (who has arrived early and safe!), this Creamy Chicken & Vegetable Soup from my Annabel Karmel book, Quick & Easy Toddler Meals. I have featured this soup here before, but as I’m batch cooking in preparation for the impending arrival of our new baby (who has arrived), this was something that was quick and easy to make, filling and tasty.
I made double of the quantities below:

•30g (1 oz) butter
•1 large onion, finely chopped
•100g (3 ½ oz) carrot, diced
•1 stick celery, diced
•30g (1 oz) flour
•1 litre (1 ¾ pints) chicken stock
•3 tbsp double cream
•50g small pasta shells
•75g (3 oz) cooked chicken breast, diced
•1 tbsp chives, chopped
•Salt and pepper to season
1)Heat the butter in a saucepan, and fry the onion for 2 minutes. Add the carrots and celery and fry for 5 minutes.
2)Stir in the flour, blend in the stock, then bring the soup to the boil. Cover and simmer for 10 minutes until the vegetables are tender.
3)Meanwhile, cook the pasta according to the packet instructions.
4)Add the diced chicken, double cream, pasta and chives. Simmer for 3 minutes. Season to taste.
Serve with some brown bread & enjoy!!!
