Sausage & Bean Hot Pot

This week I have been batch cooking a few different meals, so that when the baby arrives there are dinners in the freezer for Amelia…..even if my husband and I live on take-away for the initial few weeks, or at least after my mum goes home, I know I have something decent for Amelia to eat!

This Bean and Sausage hot-pot is really filling and moorish, as well as being really quick and tasty. It’s taken from my Annabel Karmel Quick & Easy Toddler Recipes book.

I have altered the recipe below by adding an extra tin of mixed beans,an extra onion, clove of garlic, a whole bottle of Passata and some extra ketchup and worcestershire sauce to make a little extra to freeze. With the extra ingredients I had enough for two adult dinners, one toddler and 6 portions to freeze.

•2 tsp oil
•1 onion,finely chopped
•1 garlic clove,crushed
•500g Passata
•1/2 tsp Worcestershire sauce
•1/2 tsp brown sugar
•3 tbsp ketchup
•1 tsp thyme
•1 x 400g can haricot beans,drained
•6 good quality cooked sausages

1)Heat the oil in a saucepan. Add the onion and cook for 5 mum sites, then add the garlic and fry fir 30 seconds. Add the remaining ingredients, except the cooked sausages and bring to the boil, then summer for 5 minutes.

2)Slice each sausage into three, add them to the saucepan and summer everything together for 5 minutes.

3)Serve with mash and peas

  1. These photos could have been taken in my kitchen, down to the toddler portions in babypotz with potatoes on the side. We call this “cowboy stew” and everyone loves it. Looking forward to hearing your news 🙂
