I was looking to make a sweet treat for Amelia a few days ago,with whatever I had in my cupboards. This recipe for Sultana Drop Scones is quick & easy,with everything most kitchen cupboards will have in stock. They are really tasty,serve with butter or jam. Unlike regular scones,these are soft on the outside & inside,with a more cake mixture consistency,perfect for weaning. We ate most of them,and put what was left in the freezer. •Suitable for freezing
•225g (8oz) self-raising flour
•1 tsp baking powder
•50g (2oz) caster sugar
•200ml (7 fl oz) milk
•100g (3 1/2 oz) sultanas
•a little sunflower oil for frying
1.Measure the flour,baking powder and caster sugar into a bowl,add the egg and milk and whisk together until smooth. Add the sultanas and mix them into the dough until evenly dispersed.
2.Heat a little oil in a frying pan (I added a little butter to the oil for flavour), then spoon heaped tablespoons of the scone mixture into the pan and fry for a few minutes on each side until puffed up and lightly golden.
3.Serve warm with butter or leave to cool and serve with jam. Enjoy!
